Introduction and local significance
Las XXVI Jornadas Micológicas in Canicosa de la Sierra take place from 26 October to 2 November 2026 in this municipality in the province of Burgos. Organised by the Town Council together with the Provincial Council of Burgos and various entities, they combine educational, cultural and gastronomic activities in the comarca de Pinares (Pinares region). This autumn event brings knowledge of fungal species to schoolchildren, enthusiasts and catering professionals. At the same time, it hosts the XIX Feria Mico-Agroalimentaria to promote the territory's natural resources.
Historical origins and tradition
Without specific historical data on their foundation in the context, the tradition of these days is based on the local community and school participation. Since the beginning of the programme, pupils from the local school produce posters and crafts related to mushroom picking. The activities promote traditional mycological culture through exhibitions of drawings, photographs and informative displays in the municipal hall.
Programme and main events
The official programme of Las XXVI Jornadas Micológicas in Canicosa de la Sierra includes mountain outings for gathering specimens with mycological guides and introductory talks given by Micocyl. Highlights include the opening of the MICOhabitats exhibition, the boletus mushroom risotto gastronomic workshop and the XIX Feria Mico-Agroalimentaria in the Plaza Mayor. The event also features a roundtable discussion on the world of mushrooms, the V Encuentro de Cocineros Pinariegos and a mycological pastry workshop. To check the detailed schedules for each day, it is recommended to consult the official programme before visiting.
Traditional festival food
The gastronomy of the festival revolves around the culinary use of mushrooms and fungi from the comarca de Pinares. During the fair, a boletus mushroom risotto is prepared with the collaboration of the Asociación de Mujeres «El Carrascal» and the Asociación de Jubilados y Pensionistas «Villa de Canicosa». Likewise, the V Encuentro de Cocineros Pinariegos brings together chefs from various establishments to show different ways of incorporating mushrooms into cooking. The closing of the event also includes a workshop dedicated to mycological pastry.
