Introduction and local significance

Fitruf en Sarrión, the International Truffle Fair, is a monographic event dedicated to the black truffle (Tuber melanosporum) held in this Teruel municipality of just over 1,200 inhabitants. The current edition takes place from 5 to 7 December 2026, right in the middle of the harvesting season in the Gúdar-Javalambre comarca. The gathering brings together professionals and visitors in a municipality whose region accounts for around 30% of global production of this fungus.

Historical origins and tradition

The fair reaches its twenty-fifth edition as a meeting point for the truffle sector in the province of Teruel, an area boasting around 10,000 hectares dedicated to this crop. Developing plantations with inoculated holm oaks requires a wait of between seven and ten years to obtain the first harvest, setting the productive rhythm of the comarca.

Traditional work with truffle dogs forms the core of the event's practical demonstrations. Throughout the event, live demonstrations showcase the ground-tracking method, the extraction of the fungus, and the subsequent grading of specimens according to their quality.

Programme and main events

Entry to the venue is free of charge, and the site is organised into two pavilions with around 40 exhibitors divided between the general commercial area and the professional zone. Main activities include the following:

  • Truffle dog search competitions: Skill trials in junior and adult categories to locate hidden truffles.
  • Charity truffle auction: Public bidding on quality specimens, with proceeds donated to the Asociación Española Contra el Cáncer (Spanish Association Against Cancer).
  • Showcookings: Practical sessions led by professional chefs focusing on the use of truffles in the kitchen.
  • Sensory tastings and pairings: Workshops on olfactory and gustatory analysis combining black truffle and wine.
  • Technical and scientific conferences: Talks focusing on research, crop management, and the latest developments in the sector.

Taking part in the auction, the dog competitions, and the tastings requires prior registration between 3 and 21 November.

Traditional festival food

The culinary offering of Fitruf en Sarrión revolves exclusively around fresh black truffles newly harvested from the local hillsides. During the fair, up to 15 kilograms of truffles are consumed across the venue's various culinary activities:

  • Black truffle tastings: Samples prepared to showcase the flavour and aroma of Tuber melanosporum harvested during the winter season.
  • Truffle and wine pairings: Guided tastings aimed at combining the organoleptic properties of fresh truffles with different varieties of wine.

Visitor guide and where to stay

Sarrión stands at an altitude of almost 1,000 metres and around 38 kilometres from the provincial capital of Teruel. Road access is via the A-23 dual carriageway, located about two hours from Zaragoza and under two hours from Valencia. For travelling by public transport, the practical option is to reach the city of Teruel and complete the final leg by shared taxi or hire car.

On the busiest days, it is best to park outside the centre and wear thermal clothing with mud- and ice-resistant footwear. It is advisable to book accommodation well in advance for the festival dates, as local availability fills up quickly and many attendees stay overnight in Teruel or neighbouring villages. Staying in the municipality itself or in nearby towns makes it easier to attend the evening events. Before travelling, check the official programme, as schedules and events are subject to change.
