Introduction and local significance
The Feria de la Matanza y Productos Tradicionales (Slaughter and Traditional Products Fair) in Montellano takes place from 3 to 4 December 2026 in the province of Sevilla, within the autonomous community of Andalusia. This gastronomic gathering is officially organised by Montellano Town Council with the main objective of showcasing and promoting pork products. The annual event also aims to boost local livestock farming, traditional gastronomy and the most deeply rooted customs of this Sevillian town. It is designed as an attraction for visitors interested in the agri-food sector and the authentic flavours of the region.
Historical origins and tradition
This first edition of the Feria de la Matanza y Productos Tradicionales in Montellano has been launched by the council to revive practices linked to rural life and the local economy. The event revolves around the artisanal work of the traditional pig slaughter (matanza), an activity that was once common in homes across the region at this time of year. Through this gathering, popular knowledge regarding the traditional preparation of pork products and the full use of livestock is recovered. The initiative aims to keep the municipality's collective memory alive through the demonstration of trades and techniques that have defined the gastronomic identity of its inhabitants for generations.
Programme and main events
The official programme for this edition takes place entirely at the Recinto Ferial (fairground) and features a range of activities for attendees. Among the official events, the official opening stands out, leading into various recreational and informative activities. Visitors can witness live demonstrations of the processes and preparations related to the pig slaughter, covering stages such as butchering and the artisanal production of cured meats (embutidos).
The schedule also includes a specialised ham-carving masterclass led by expert Jesús García Castillo in the Carpa Municipal (Municipal Marquee). The event is rounded off with live musical performances, continuous children's entertainment and tastings of homemade stews at the charity bar set up for the occasion.
Traditional festival food
The fair's culinary offerings focus on pork products alongside the work of local bakeries and artisans in Montellano. Throughout the event, visitors have the opportunity to sample and purchase a wide variety of traditional matanza specialities:
- Chorizos: Traditional cured pork sausage made in an artisanal way with pork and local spices.
- Morcillas: Traditional blood sausages obtained directly from the matanza process.
- Chicharrones: Crispy, traditional pork belly bites highly prized in the region.
- Pan: Traditional bread baked and presented by the municipality's local bakeries.
- Dulces tradicionales: Traditional local pastries and sweets displayed by local bakeries and workshops.
- Guisos caseros: Traditional stews starring pork, served directly at the charity bar on the fairground.
Visitor guide and where to stay
The fair's activities are mainly concentrated in the Carpa Municipal located inside the Recinto Ferial in Montellano. To make getting around easier during the festivities, it is recommended to use public transport or park outside the town centre during peak times.
It is advisable to plan and book accommodation well in advance to secure a place to stay during the event dates. Staying in the town itself or in neighbouring villages makes it much easier to follow the scheduled events, especially those in the evening. Before heading to the fairground, it is highly recommended to check the official programme for any possible changes in schedules or activity locations.
